Grated Potato Pancakes

I originally downloaded this recipe from the SOAR web site almost 6 years ago. I’ve modified it a bit over the years, and the pancakes are always a hit! I made a batch this morning, and decided it was time to share. My changes are in (parens).

  1. I am trying to locate the mailing address of the Homemakers Research Institute. I am trying to secure a copy of Mary Margaret McBride Enclyclopedia of Cooking published by your firm.

  2. I have most of Mary Margaret McBride Enclyclopedia of Cooking Published by your firm from my mother there are a few sections missing and I would love to replace them.

  3. My mother has a cookbook that she purchased in sections from Winn Dixie grocery stores in the 1960’s. The years have taken a toll on the book and some pages are now missing. Several pages show that it was copyrighted in 1960 By The Homemakers Research Institute. Completed the book was about 4-1/2 – 6″ wide and it had a hard cardboard cover that was attached with big plastic screws. The cover is torn so we do not know the name of this book. Any information you have that would lead us to another copy would be greatly appreciated.

    Thank you,

    Ginger Cruz
